Pongracz Sparkling Wine's story begins with Desiderius Pongracz a member of Hungarian aristocracy fought in the second world war and was a prisoner of war in Siberia. Eventually moving back to Hungary and fleeing to Germany - he used his aristocratic connections relocated to Namibia securing the position of farm manager.

He moved to Stellenbosch in 1958, where he was again a farm manager before obtaining his Master of Science Degree in Agriculture at the University of Stellenbosch.

Pongrácz died at the age of 61, killed in a car accident while en route to in Stellenbosch in 1984. While highly regarded for his scientific knowledge of viticulture and practical application thereof, he is also remembered for his love of anthropology, classical music and Daschund dogs. He also had a gift for languages, Hungarian, Russian, Italian, French, German, English and Afrikaans, and was extremely influential in shaping the South African wine industry, promoting plantings of Chardonnay and Sauvignon Blanc amongst others.
